Brawn is a traditional British recipe for a classic dish of the meat from a pig's head and trotters cooked in a vegetable and spice stock that's then used to form a jelly that sets around the meat. Serve it sliced (2.5-3.0mm) as a quick snack, as a sandwich filling, or with your favorite mustard.
