Fideua is a seafood dish originally from the coast of Valencia which is made in a similar way to paella. Its main ingredients are: pasta noodles (usually hollow), fish (rockfish, monkfish, cuttlefish, squid), and shellfish (squilla mantis, shrimp, crayfish). In this way it is similar to Arroz a Banda, but with noodles substituted for the rice. It is seasoned mainly with lemon.

Just like paella, it is made in a container also called a paella disk, in other words, a wide and flat frying pan, although there are other traditional variants made in casserole.

Gandia is the birthplace of in the city of Safor they annually celebrate an important competition-contest where the best cooks delight in their preparation.

Currently, various skill competitions for chefs are done in preparing Fideua.
