Metal dishes that fit into bain-maries and come in a variety of sizes and depths. Deep ones are used for sauces, wet dishes and soups, while flat ones are used for individual food items, rice, pasta or potatoes. Bain-marie dishes are also used for storing food and mise en place as they can immediately be moved to the required fridge, cooking or serving area.
