Malic acid

Malic acid is an organic compound with the formula HO2CCH2CHOHCO2H. It is a dicarboxylic acid that is made by all living organisms, contributes to the pleasantly sour taste of fruits, and is used as a food additive.

Malic acid is found naturally in apples, pears, tomatoes, bananas and cherries. It has similar applications to citric acid and is the preferred acid in low calorie drinks, cider and apple drinks. However, it has the disadvantage of being slightly more expensive than citric acid.

It is produced commercially from maleic anhydride.
