Gas provides instant heat and is often the preferred choice in kitchen. If not needed, only a pilot light stays switched on so that the burner can be lit when needed. Cleaning of gas equipment can be more of a hassle as the various parts have to be disassembled and assembled again after cleaning. Heat control is instant, but if care is not taken, the wall of the cooking vessels get too hot and may burn the contents.
