Sieve
Sieves are used for sifting flour, powdered sugar, etc. to remove lumps or lighten the item. They have a high outer wall , so contents will not spill out easily, with a fine mesh on the bottom. Drum or Tami sieves can also be used for mashing small amounts of soft vegetables. When preparing mousselines the finished mixtures are pushed through a sieve to remove pieces of skin, meat or sinew and leave a fine-textured mixture.
